Vegan congee topped with mushrooms, scallions and shallots

Ingredients

  • 1/2 cup rice
  • 2 1/2 cup vegetable broth
  • 3 cloves garlic
  • 3 dried shiitake mushroom heads
  • 1 small knob of ginger
  • 3 stalks of scallions
  • shiitake mushrooms
  • fried shallots
  • Kimura Chili Oil

Instructions

  1. Add rice, water, vegetable broth, ginger, garlic, scallion stems (save the top part for garnish later), and dried shiitake in a pot.
  2. Bring the pot to boil then let it simmer for 1 hour.
  3. Scoop out the ginger, garlic and dried shiitake from the pot.
  4. Top with sautéed shiitake mushrooms, scallions, fried shallots, and Kimura Chili Oil.
