Vegan congee topped with mushrooms, scallions and shallots
Ingredients
- 1/2 cup rice
- 2 1/2 cup vegetable broth
- 3 cloves garlic
- 3 dried shiitake mushroom heads
- 1 small knob of ginger
- 3 stalks of scallions
- shiitake mushrooms
- fried shallots
- Kimura Chili Oil
Instructions
- Add rice, water, vegetable broth, ginger, garlic, scallion stems (save the top part for garnish later), and dried shiitake in a pot.
- Bring the pot to boil then let it simmer for 1 hour.
- Scoop out the ginger, garlic and dried shiitake from the pot.
- Top with sautéed shiitake mushrooms, scallions, fried shallots, and Kimura Chili Oil.
