Duck Fried Rice

Duck Fried Rice

Seared duck breast, medium rare, over buttery garlic fried rice with a kick.

Ingredients

  • 1 duck breast
  • Salt (to taste)
  • 2 cups cooked rice
  • 2 eggs
  • 3 cloves garlic, minced
  • 3 green onions (scallions), chopped
  • 2 tbsp butter
  • 2 tbsp Kimura Chili Oil
  • 1 tbsp soy sauce

Instructions

  1. Salt duck breast generously and let sit at room temperature for 10 minutes.
  2. Heat a cast iron pan over medium-high heat. Sear duck breast skin-side down for 5–6 minutes until skin is crispy, then flip and cook 3–4 more minutes to medium rare. Rest on a cutting board.
  3. While duck rests, mince garlic and chop green onions. In a bowl, mix eggs and cooked rice together until combined.
  4. In the same cast iron pan over medium heat, add butter. Once melted, add garlic and the white parts of the scallions — cook 1 minute.
  5. Add the rice and egg mixture. Stir-fry for 3–4 minutes, pressing the rice flat to get some crispy bits. Add soy sauce and mix.
  6. Drizzle Kimura Chili Oil over the rice and toss.
  7. Slice duck breast and lay on top of the fried rice. Finish with green onion tops and an extra drizzle of Kimura.
